Features of Kai Shun Premier Tim Mälzer
Shun Premier Tim Mälzer blade
The blade is made from 32-layered damascus steel. This is a forging technique that uses multiple layers of steel and forges them on top of each other to create a unique, woodgrain-like effect. As a result, each pattern, and thus each blade, is unique. The core of the blade is made from VG-MAX steel. This is a stainless Japanese steel type with a hardness of 61 HRC. The blade is enhanced with a hammered Tsuchime finish. Not only does this look great, it also has practical benefits. Thanks to this blade finish, ingredients are less likely to stick to the blade.
Shun Premier Tim Mälzer handle
The handles are made from brown walnut wood and feature stunning details, like the brass ring at the end of the handle or the steel end cap with the Tim Mälzer logo on it. The Western shape of the handle stands out. It's different from handles in Japanese style. As such, Tim Mälzer combines the best of both worlds. He does the same with many of his delicious recipes.
