The Eden Kanso Aogami-kiritsuke with an 18 cm blade is a stunning, Japanese kitchen knife. It is traditionally made by hand. The knife was originally designed as a versatile knife, perfect when preparing Asian dishes. They did so by combining the blade of a nakiri (vegetable knife) and sujihiki (fish knife). Because the two blade types were combined you can use this knife to cut both fish and vegetables. With its 18 cm blade the kiritsuke is perfect for daily use in the kitchen. Great value for money This is my first aogami steel knife. Very different then european counterparts in feel and use. Lighter then I expected. Looking forward to using it more.
