Looking for a santoku knife that’s a cut above the rest?

Santoku from the DP collection from Tojiro. 

Tojiro is one of the largest Japanese knife brands. This innovative brand has won numerous design awards. Traditional Japanese techniques are combined with modern production methods. The Tojiro kitchen knives are razor-sharp and very sustainable. 

For knives there is always a compromise between hardness (sharp, but brittle and less stainless) and flexible (less sharp and less brittle, more stainless). Tojiro opted for a multi-layer construction. The core is made from VG10 steel surrounded by 13-chrome steel. This leaves you with a unique combination of hardness and a much higher corrosion-resistance than with carbon steel. 

The handle is made from black ECO with three rivets. This is a combination of plastic and recycled wood. This is even more sustainable than pakka wood.

Solid and handy, you can fell the sturdiness of the knife without feeling any weight on your hand. 

Ergonomic and a jack of all trades

Bought this as a gift for the girlfriend and she loves it. Much appreciated 

Slices like nobody's business. Perfect for large hard foodstuffs, like potatoes and rutabega, due to the tall and very narrow blade, but also a good all-rounder. The factory grind was a bit sloppy, so I ended up resetting the edge, which takes a bit of work with steel of this hardness.
