Beautiful Japanese paring knife made with damask steel blade. The core of the blade is rust resistant VG10-steel with a cover of classic damask steel. In total 33 layers of steel. The top of the blade shows a hammer pattern. This looks nice and also prevents food from sticking.  
   

 
The handle is made of very smooth feeling Spanish mahogany. It has a warm appearance with a deep red colour. The shape of the handle, combined with the stainless steel bolster has a more European look. A special blend of various styles. Of course the blade has a classic Japanese edge. That means that the blade is incredibly sharp out of the box.  
   


For the maintenance of this knife we recommend ' Naniwa ' Japanese Waterstones.

Alors là c'est le choc ! Amateur de jolis couteaux de cuisine en différents aciers comme X50crMov15, Nitrox+, acier suédois Sandvik et même le Cromova je viens de faire un test de découpes de tomates molles. 
Conclusion :
Ce couteau japonais est un rasoir à côté ! La découpe des tomates molles est difficile, là c'est comme couper dans du beurre tendre. Les autres couteaux écrasent la chair de tomates, celui-ci parvient à la découper avec la plus grande facilité sans abîmer les tranches.
Je vais commander rapidement le même avec une lame d'au moins 21 cm. En plus il est magnifique, la finition du manche et de la lame est remarquable, il est léger, j'adore sa prise en main, c'est un bijou.
Mes autres couteaux seront bientôt en vente...
