The **Eden Sugoi Olive paring knife** is a practical kitchen knife that will come in handy in any kitchen. A paring knife is suited for many small cutting tasks and light peeling work. In terms of shape the knife might remind you of a small chef's knife. You can peel vegetables and fruit, garnish and, for instance, cut an apple into pieces. 

## Blade made from VG10 steel

The blade is made from VG10 steel with a hardness of 58-60 HRC. It is a stainless type of steel with a relatively high carbon content. This means that VG10 steel is a lot harder than most stainless types of steel. As such the edge of the knife is sharper than European knives and it retains its sharpness for a long time. VG10 steel is known for the fact that is easy to sharpen than, for instance, a Japanese knife made from carbon steel. This is the result of the molecular construction of the steel. We can talk about it for hours, but we won't. The blade of the paring knife is enhanced with a damascus finish. As such the knife looks amazing. Appearance, after all, also matters! 

The paring knife from the Eden Sugoi Olive collection does not have a bolster. The advantage is that you can use the entire blade when you use the knife. In addition, the knife is easy to sharpen because the bolster doesn't get in the way.

## Maintaining your new paring knife

If you properly maintain your paring knife you can enjoy it for years! Like most kitchen knives, the knives from the Sugoi Olive collection are not dishwasher proof. If you put them in the dishwasher you will notice soon enough that the olive wood will be affected by the dishwasher. It is the result of a combination of the harsh detergent, the heat and the fact that the blades stay damp too long in the dishwasher. As such you damage the wooden handle and the blade can start to rust. It is best to wash and dry it by hand immediately after use. Add a coat of oil to the handle every once in a while to keep it looking great.

Il s'agit de notre 2e couteau d'office de chez Eden et nous sommes partis pour être des fidèles de la marque ! Le modèle Sugoi Olive est sublime, la finition digne d'un couteau haut-de-gamme. L'équilibre et la tenue en main (droitiers) sont parfaits. Le vrai plus : le talon de la lame sert également à trancher. Pratique jusqu'au bout !

Out of the box very sharp, effortless shaving.

Blade is quite thin. Even a bit flexible.
Used it immediately to clean up a piece of meat, its the perfect size for that. Can easily get under tendons and glides well through the meat. Also great for cutting veggies when the 24cm knife is just too much.

Fit and finish:
You don't feel the part where metal meets wood, at all. Well done. Spine is well rounded, better than on expensive knives i have held before.

Edge retention could be a bit better with that steel. Otherwise perfect as a utility knife.
