This **Eden Kanso Aogami chef's knife** is a real all-rounder. Because of the length and height of the blade, this knife is great when cutting meat, fish, vegetables and fruit. It's also ideal for chopping herbs, crushing peppercorns and peeling garlic cloves. This chef's knife is a part of the Kanso Aogami collection: a complete range of stunning Eden kitchen knives. Made with only one purpose: to provide ultimate cutting performance! 

## Blue Paper Steel blade

This 23 cm Japanese chef's knife was forged by hand and made from Blue Paper Steel. Blue Paper Steel is White Paper Steel with the addition of small amounts of chrome and tungsten. It might make the steel a little less traditional but it does improve the qualities. Blue Paper Steel is more resistant to corrosion and chipping than White Paper Steel, although it is certainly not a stainless steel type. The knife will quickly form a patina. This is an oxidation layer that protects the knife from rust. You can recognize a patina by the discolouration of the surface of the blade. ## Classic Japanese handle

The classic red sandal wood handle is asymmetrical. As such it feels great in hand. The shape of the handle is perfect for left-handed use. This doesn't mean, however that it cannot be used by right-handed users. I will only be a little less comfortable to use.

## Sharpening Eden Kanso Aogami kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

I just received the knife, only opened it, stored and when i wanted to use it few days later it was all rusted.

Ik heb ondertussen het mes een maand. 
Dagelijks wordt dit mes gebruikt (sla, tomaten, vlees...)

Het mes wordt enkel met koud water gewassen en tot nu toe nog nooit geslepen.  Mijn vorige mes was een 50€-voor-de-ganse-blok type en dit moest ik minstens 1 keer per 7 dagen slijpen. 

Het Linkshandige aan het handvat is voor mij een raadsel. Het mes ligt voor mij goed in de hand, zowel in de linker als de rechterhand. 

Na een maand ben ik dus super tevreden van het mes.

Na veel getob, gezoek en gedraai de knoop doorgehakt om de aogami kanso lijn aan te schaffen van Eden  (23cm gyuto, office en utility). eerste indruk: licht, scherp, zéér reactief. Verder goed verpakt, goed verstuurd. messen zijn out of the box redelijk scherp, maar na een slijpsteen behandeling zijn ze echt abnormaal scherp. wel regelmatig goed droog vegen tijdens gebruik. zeer zeker een aanrader voor de (hobby)chef!
